What did Dr. Simeons consider to be a serving of meat and how should it be prepared?

Per Dr. Simeons , “The Diet” – … “100 grams of veal, beef, chicken breast, fresh white fish, lobster, crab, or shrimp. All visible fat must be carefully removed before cooking, and the meat must be weighed raw. It must be boiled or grilled without additional fat.”

Are there any guidelines an HCG dieter should follow with regard to choosing what meats to eat each day while on the Protocol?

An HCG dieter should vary his protein selections to get a variety of vitamins and nutrients.  In addition, ground beef in particular, should only be eaten 2-3 times a week since American beef is fattier than the beef to which Dr. Simeons referred.

Are meat (beef, chicken) products packaged in single serving packages?

Yes, with the exception of ground beef and chicken, which are packaged in servings of two.  Each package of chicken contains two 100g servings of precooked white chicken breast packed in its own juice. Each package of ground beef contains two 100g servings that have a wax paper inserted in between two patties for easy separation. 

Although the filet mignon, sirloin, and veal are PACKAGED in single servings, these meat products are SOLD IN INCREMENTS of 5. The ground beef and chicken are PACKAGED in double servings, these meat products are SOLD IN INCREMENTS of 6.

Are the beef steaks and ground beef precooked?

Steaks and ground beef are NOT precooked.   Each serving of beef is of the highest quality, aged to perfection, and cut to 3.5 oz.  It is then flash frozen to ensure freshness and individually cryo-packed for convenience.

Is the chicken precooked?

The chicken IS precooked.  3.5 oz. servings of chicken are cooked ‘sous vide’ which means chicken and allowable spices are vacuum-packed in individual–portion pouches and cooked under a vacuum.  Surrounded by its own juice during the cooking process, the chicken is moist and flavorful.

What is “dry aging” and what effect does the process have on the taste of beef?

The process of “dry aging” consists of hanging the sides of beef in a temperature and humidity controlled room for 21-28 days from the date of harvest. The moisture from the meat starts to evaporate leaving a very tender, flavorful meat that is most desired by many elite chefs.

Is the beef shipped fresh or frozen?

All of the beef is flash frozen to lock in the full flavor of the dry aging process.  All perishable items are shipped frozen with an estimated shelf life of 7 days, even if they arrive thawed, but cool to the touch.

Is the meat (beef, chicken) thawed or frozen when it arrives?

The meat may be partially or completely thawed by the time it arrives because the portions of meat are so small.  This should not be a problem.  As long as the meat is cool to the touch, your order is in good condition.

What if the beef is a brown color?

A deep brown color is common when the oxygen has been removed from the packaging.  Once the product is thawed and beef is re-exposed to air, the red color will return.

What should I do with the meat (beef, chicken) when it arrives?

Upon delivery, place perishable items, such as meat, in the refrigerator or freezer, depending on when you plan to eat it.

How long can I keep the meat (beef, chicken) in the freezer?

As long as the outer packaging stays in good condition, you can keep your order in the freezer for up to 12 months.  Make sure your freezer is set to the correct temperature of 0°F.

How should I defrost frozen meat (beef, chicken)?

Normal Thaw:  Keep your meat in its original packaging and move it from the freezer to the refrigerator for 6-8 hours.

 Quick thaw:  Completely submerge the product in its original packaging in a container of cold water for 15-20 minutes.  If the packaging is not airtight, place it in a re-sealable plastic bag before submerging it.

Are the food photos of the actual products being sold?

Yes, however the side dishes and garnishes are for illustration only.

What if there is a hunk of fat on my protocol compliant precut portion of beef?

Perfect Portions sells the leanest cuts of meat. “Lean Cuts” refers to the amount of fat that is dispersed throughout the meat (marbling) not fat that is on the outside of the cut. Depending on where certain pieces come from, there may be some external fat. This fat is easily removed and does not affect the portion size or weight loss.
