Free HCG Maintenance Recipes: HCG P3 Vegetable Chili

Warm up with this tasty HCG meal for the HCG maintenance phase.

HCG P3 Vegetable Chili

  • 16 ounces Lean Ground Beef
  • 1 tablespoon Olive Oil
  • ½ cup Onion, Chopped
  • ½ cup Green Bell Pepper, Chopped
  • ¼ cup Carrots, Chopped
  • 1 tablespoon Minced Garlic
  • 3 tablespoons Chili Powder
  • 1/2 teaspoon Cumin
  • 1 teaspoon Sea Salt
  • 1 teaspoon Pepper
  • 1 can Fired Roasted Diced Tomatoes
  • 1 can Tomato Sauce
  • 1 can Chili Beans, Undrained
  • ½ cup Mushrooms, Chopped

Pre-heat a non-stick skillet over medium-high heat. Add olive oil. Once warm add ground beef, onion, bell pepper, carrots, and garlic. During the cooking process, use a spatula or wooden spoon to continuously break apart ground beef into smaller and smaller pieces. Sautee for 7 minutes or until the meat is browned and the vegetable is softened. Next add the spices, tomatoes, and tomato sauce. Bring to boil, once boiling reduce the heat to low. Cover with lid and cook over low heat for 1 hour, stirring every 20 minutes. Lastly, return to medium heat, add beans and mushrooms. Allow to heat for 5 minutes. Remove from heat and enjoy! This HCG maintenance recipe makes 4-5 servings. This HCG P3 recipe is safe for the 1st 3 weeks of HCG phase 3.
